Hello,
Could someone help me building a monk?
I'm looking for a human, unarmed, and maybe (just maybe) kensai.
I'd like to have, al least, 20 levels of monk.

I believe the most common unarmed monk builds go for Epic Dodge.
Monk20/Rogue5/SD5 - which trades the 4th attack for UMD access.
Monk20/Rogue10 - about the same as the one above, without HIPS but a few more skills.
Monk20/Fighter5/SD5 - which nets you 4 attacks pre-epic, Epic Weapon Specialization and HIPS. There is the distinct lack of UMD here, it might be alright for a Kensai.

Basically, build for epic dodge.
Make sure to start with 14 INT (for improved expertise) and 19 DEX (with gift/subrace) and put every point from levels into DEX. You can split the rest of the points however you want between STR/CON/WIS to reach your desired balance of damage/HP/AC.

Does anyone have much experience with perfect self in pve?
Eg is it worth aiming to hit 20 mo earlier for the dr in pve or taking sd levels earlier for a better playing experience on the way up to 30??

The DR is nearly none existent and completely irrelevant by the time you get it as nearly all physical damage has EB of at least +1 to bypass 20/+1. However, the things who dont pass it will by reduced by 20 flat, which is a lot. So its cool to have as a quality of life boon, but nothing more.
Perfect Self is good for immunity vs mind effecting spells and spell-like abilities, which is almost all forms of will-save based crowd control (I think fear auras dont count here unfortunately). That said, you're not exactly depended on it either, as you have pretty decent will save with monk as your primary class and wisdom as your secondary attribute. So its also pretty cool as a quality of life boon, as you never need to worry about rolling 1 against most cc.
The order is 3 rogue, 16 monk, 7 rogue, 4 monk. You can also give up some skill points and start 16 monk straight of the oven if you want to lvl faster.
EDIT: For SD build, go 20 monk, 5 sd, 3 rogue, 2 monk. But really, dont go SD unless you do it for the shadow and you REALLY want this shadow. Otherwise, 20/10 is objectively stronger.
