Easy! Talking skeleton.
Maybe they have only the vaguest sense of their life before undeath. Maybe all memory of their previous life has been scrubbed away, and who they were is only so much trivia about themselves. Maybe they're not even in their own bones, but those of someone else.
But I would be a skeleton. A basic race skeleton with no bells and whistles, but I could gain levels. Probably be a rogue.
Or I could be a skeleton wizard, and get really sad whenever anyone thinks I'm a lich.
