Curious question.
When I leave my golems somewhere and log off, does my control stones stop working if someone breaks the constructs when I'm offline? Thus far I've kept them in good safe at the Nomad's storage when the first bar closes.

No. If you disconnect (intentionally or otherwise) with your golem active it will delink itself from the stone and if it's destroyed after that then you don't lose your stone. While golem remains in the world you can't summon or control another golem with that stone, however, and you need to relink the stone to the golem if you want to control (making it vulnerable to destruction along with the golem).
